- 400 g sliced eggplants

- 1 red onion, sliced

- 1 green chili pepper, deseeded, finely chopped

- Lemon juice, freshly squeezed
- Oregano, fresh

- 1 dash of date syrup
- 1 dash of sweet cream

Preparation
Heat the pan and toss with olive oil, fry the eggplants in the hot olive oil, remove from the pan and keep warm.
Reduce the heat of the pan and sauté the onions, add the garlic, chili, ginger, pepper, salt and tomatoes and season with fresh lemon juice. Add the oregano and turmeric and leave to simmer.
Finish with a dash of date syrup and sweet cream.
