Ingredients

Preparation

  1. Soak 150 g dried peas in plenty of cold water overnight
  2. Pour away the soaking water and wash the peas thoroughly
  3. Water: Put the peas in a pan with cold water
  4. Wood: Add a slice of lemon
  5. Fire: bring to the boil and add juniper berries
  6. Earth: Oil
  7. Metal: add whole peppercorns, bay leaves, finely chopped onion, finely chopped ginger and dried thyme 
  8. Water: add 2 strips of wakame (algae) and simmer the dish over a low heat for 1-2 hours
  9. Once the peas are soft, remove the ingredients such as juniper berries, lemon slice, peppercorns and bay leaves
  10. Water: season to taste with salt and soy sauce
