Ingredients
- 400 g plate lentils, dried
- Tomato paste
- White wine
- Rose bell pepper
- 500 ml vegetable stock
- Carrots
- Agave syrup
- Clarified butter
- 1 leek stalk
- Onion
- 4 peppercorns, whole
- Salt
- Lemon juice
- Feta cheese (made from goat's milk)
Preparation
- Soak 400 g dried lentils in plenty of cold water overnight
- Pour away the soaking water and rinse the lentils thoroughly
- Water: Put the plate lentils in the pot
- Wood: add tomato puree and white wine
- Fire: 1 pinch of rose paprika
- Soil: and fill up with 500 ml vegetable stock. Add finely chopped carrot, agave syrup and clarified butter
- Metal: Add finely chopped leek, onion and 4 whole peppercorns
- Water: season with salt and simmer the dish over a low heat for approx. 1 hour. As soon as the lentils are soft, remove ingredients such as peppercorns if necessary
- Wood: season with lemon or wine vinegar
- Fire: and sprinkle the finely chopped feta cheese over the dish
